Ingredients

1 packet flour tortillas.
1 packet quorn pieces, or tofu, or chickpeas.
1 green or red pepper
1 courgette
mushrooms
sweetcorn
onion
tinned tomato, or passata

The herbs and spices are optional, substitute your favourites:
garlic
ginger
dried cummin
paprika
lemon juice

Grated cheese.

Handy Hint

You can vary this almost endlessly - include different vegetables, yoghurt or cottage cheese. Or without dairy at all.

Method

Chop and stir fry the vegetables, plus the quorn/tofu/chickpeas.

Add the spices and stir to coat the vegetables.

Add the chopped tinned tomato or passata, plus lemon juice.

Heat tortillas (1 minute in microwave, or under grill).

To finish either roll filling inside tortilla including the grated cheese or, to make enchiladas, roll the filling inside tortillas and place these in a baking tray.

Grate cheese on top and put under grill or in oven for 5 minutes.
