Ingredients

500g (1lb) rhubarb, cut into 2-inch lengths
500g (1lb) apples, cored, cut into wedges
100g (4oz) caster sugar
25g (1oz) butter, cubed
50g (2oz) plain flour
100g (4oz) muesli
1 tbsp light muscavado sugar
Pinch of cinnamon

Handy Hint

Add stem ginger to the fruit for a sophisticated twist on rhubarb crumble.

Method

1. Put rhubarb, apple and caster sugar into a small baking tin and bake at 210C for 20 minutes.
2. Rub together butter and flour and mix in remaining ingredients.
3. Spoon crumble over the baked fruit and bake for 15 to 20 minutes.
4. Serve with crème fraiche.

DH made a loverly rhubarb and strawberry compote last weekend, great way to get the kids to eat rhubarb and goes v well with ice-cream.

I used gala apples, as I find baking apples too tart. The recipie was lovelly.
