Ingredients

150g grated carrots
2 medium eggs
100g soft brown sugar
5 tbsp sunflower oil
100g self raising flour
1/2 tsp ground cinnamon
100g any dried fruit/s eg: raisins, chopped apricots, glace cherries (optional)

Method

Put muffin cases into a muffin tin.

Heat oven to 190C/Gas Mark 5.

Mix eggs and sugar, beat in oil.

Add dry ingredients and mix.

Spoon into muffin cases, bake for 15-20 mins until firm to the touch and golden brown.

I don't know what I did wrong but this ended up a complete disaster, the cake did not rise, the middle remained soggy, Most probably a combination of my cooking skills and the fact that I made a cake rather than individual cakes???

We all loved these cakes, even dd2(7) who insisted that carrots should not be put into a cake.
