Ingredients

250g soft cream cheese
2/3 cup caster sugar
250ml single cream (whipped)
1 egg (if allergic omit or substitute with Orgran No Egg)
4 tsp gelatin

1 pk biscuits (about 250g) crushed (if coeliac use gluten free biscuits)
125g butter

Handy Hint

Chill the base layer before attempting to put the top layer on.

Method

Make the base by meting the butter and adding the crushed biscuits.

Whip cream cheese, sugar and egg until smooth.

Mix geletine with a little hot water. Add slowly to mixture beating all the time. Fold in cream

You can add the fruit if you want at this stage or just decorate with it.

Pour mix onto top of base and leave to set.

This recipe uses powder gelatine, if you are going to get all Nigella on me and use those leaves you will have to work out how much to use.
