Ingredients

175 ml Veg oil - no butter in these cookies
200 grams soft brown sugar
100 grams white sugar
2 eggs
1 teaspoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon baking soda
260 grams whole wheat flour
25 grams cocoa powder
140 grams rolled oats
180 grams chocolate chips
40 grams desiccated coconut

Method

# Preheat oven to 190 degrees Celsius/375 degrees F (not fan assisted).

# Whisk together flour, salt, baking powder, baking soda and cocoa until well blended.

# Beat oil, sugar and eggs together and add vanilla essence. Stir.

# Add dry ingredients gradually to wet, stir well, then add choc chips.

# Mix until all ingredients are incorporated.

# Put heaped tablespoons of mix on baking sheets lined with greaseproof paper. The mix is a bit crumbly to work, but not to worry. Just squish a bit with your fingers if you need to!

# Put in oven and bake for 7-12 minutes. They are cooked when slightly cracked on top and a bit more golden in colour.

# Remove from oven and allow to cool for a minute or two before transferring to a cooling rack.

do you know what would make this a lot more healthier? coconut flour and coconut oil. Coconut flour is gluten free, high in fibre and low in carbohydrates. When it comes to coconut oil it is important to buy one that is cold pressed from young green coconuts. That's where all the health benefits lie. I use the TIANA Brand, its my favourite.. Its raw, organic and fair trade
