Ingredients7oz wheat free flour (self-raising)
2tsp baking powder
1/2 tsp bicarbonate of soda
2 1/2 oz margarine
1/3 cup agave syrup (or 2 1/2 oz sugar)
1 tsp cinnamon
4 ripe bananas mashed
Handy HintCan also cook in a round tin and use as a healthy birthday cake.
MethodPreheat oven to 180 degrees / gas mark 4.
Grease a 2lb loaf tin and sprinkle lightly with flour until the whole surface is covered. (Alternatively line with greaseproof paper.)
Sift together flour, baking powder and bicarbonate of soda and cinnamon.
Add the remaining ingredients and beat together with an electric whisk.
Or put all the ingredients in a food processor and mix together.
Put mixture in tin and bake for an hour.
