MethodSeason the chicken & brown in the oil, in a large pot and then set aside.Brown the peppers and onions over a high heat for a few minutes. Add the chorizo & chopped garlic & fry together, then stir in the rice and make sure each grain is coated in oil. Add the wine, stock,tomatoes, herbs & cayenne. Bring to the boil & place the chicken, olives & orange slices on top. Place the lid on the pot and simmer gently for one hour. | |||||||||||||||||||||
