Ingredients

4 chicken joints,
2 tbsp oil
2 red peppers, deseeded
2 onions, peeled and cut into chunks
1 tin tomatoes,
brown basmati rice
4oz chorizo, chopped into chunks
2 cloves garlic,
2oz black olives
1/2 pnt chicken stock,
175ml dry white wine
1tsp herbs,
pinch cayenne pepper
1/2 an orange,

Method

Season the chicken & brown in the oil, in a large pot and then set aside.

Brown the peppers and onions over a high heat for a few minutes.

Add the chorizo & chopped garlic & fry together, then stir in the rice and make sure each grain is coated in oil.

Add the wine, stock,tomatoes, herbs & cayenne.

Bring to the boil & place the chicken, olives & orange slices on top.

Place the lid on the pot and simmer gently for one hour.

This is a good friends-round-for-dinner dish. It can be transferred to an oven-proof dish, Gas mark 4, 170c, in which case partially-cook the rice first. Make sure the rice stays under the liquid, with the chicken on top.
