Ingredients4 Granny Smith apples (or any apples really)2 cups sugar (I use raw cane sugar or golden caster sugar but you can use any type) 8oz butter 2 eggs 3 cups flour 2 tsp baking soda 2 tsp cinnamon 1 tsp allspice 1 tsp nutmeg 1 1/2 cups sultanas or raisins optional - 1 cups chopped walnuts |

MethodPeel and roughly chop the apples.Add the sugar and leave while doing the rest of the cake. Melt the butter. Add the eggs and mix well Add this mixture to the apples. Sift the dry ingredients and mix into the wet mixture. Add the sultanas (or raisins and walnuts) Bake at 180C for 1 1/2 hours in a 23 cm tin. Check that the middle is cooked with a skewer. If it's a little bit sticky on the skewer, that's fine - it's a moist cake - but you don't want raw mixture there. Dust the top with icing sugar. | |||||||||||||||||||||
