Ingredients

1 pack shortcrust pastry (or make your own!)
3 eggs
3 tbs crème fraîche
2 bacon rashes (about 75g)
salt, pepper

Method

Line a quiche tin with pastry and bake blind for 10-15 mins at Gas 6/180C

In the meantime:
Cut bacon in small pieces and fry in a pan.

Beat the eggs with salt and pepper. Add crème and beat again.

Place bacon pieces on the baked pastry.

Pour over your egg/cream mixture and spread evenly.

Put back in the oven and cook for another 20 mins Gas 6/180C

Serve the quiche lorraine with a light salad.

This is the 'real' French quiche, which originates from the east of France, an area called 'Lorraine'. It is extremely simple and quick! Enjoy!
