Ingredients

1 carton flavoured yogurt - raspberry is good
1 carton vegetable oil
3 cartons self raising flour
1 carton caster sugar
3 eggs

Method

Empty the yoghurt into a bowl.

Then use the same yoghurt pot to measure and add:

1 carton of vegetable oil
3 cartons of self raising flour
1 carton of caster sugar

Add 3 beaten eggs.

Mix well and put into muffin cases.

Bake at 140C for about 15 mins or until golden brown.

You can also mix in a handful of frozen raspberries.

Despite a minor hiccup (I nearly forgot to add eggs) these turned out wonderfully. I used Alpro raspberry and vanilla yogurt for a dairy free version and they are delicious! Next I am going to make a sugar-free version for DH using Splenda. I did have to increase the temp to 180 using the fan oven.

Really easy to make and they are delicious. I had to bake them at 160C though

Hi, daft question I know, but what size is the carton...100ml? Asking coz I guess number of eggs would change accordingly. Thanks!

Fantastic - first muffin recipe that's ever worked for me, and mindblowingly easy. Great to make with the kids. Had to increase temperature and cooking time though.
