Ingredients

3 rashers bacon
2 large onions
1 clove of garlic
1 tablespoon of olive oil
400g tin chopped tomatoes or passata
fresh herbs - oregano is nice
8oz penne
parmesan
salt pepper

Handy Hint

Add a litle sugar to mixture to sweeten acid of tomatoes dont add a lot of salt as bacon is salty Put foil on grill to save washing up great with green salad or fresh bread penne is large enough for toddler finger food best made in advance and reheated freezes well

Method

Grill the bacon until it is brown and crispy.
Finely dice the onion and garlic and cook on low heat in non-stick frying pan with the olive oil until brown and slightly caramelised.
Chop the cooked bacon with kitchen scissors into small pieces and combine with the onion mixture in the frying pan.
Add the tomatoes and herbs and season to taste.
Simmer on low heat for about 15 minutes.
Meanwhile put 2 pints of water in large pan and bring to the boil. Add the penne and cook until it is al dente.
Serve the sauce over the pasta and sprinkle parmesan on top.
