Ingredients

a handful lentils
half onion
1 garlic clove
1 carrot
garam masala or other curry powder
1/2 low salt stock cube

Handy Hint

serve with quinoa as a change from rice. never do carrots in circles!

Method

Soak the lentils for 10 mins and remove the scummy froth stuff that rises to the top! Rinse thoroughly.
Fry the onion in some olive oil with a little curry powder for few mins until browned.
Peel the carrot and chop it into smallish cubes.
Chuck in the carrot and lentils and fry on shallow heat for 2 min.
Add enough stock or water to cover and stir it to mix.
Cook on a low heat for about 15 mins or until mushy.

this is good to make extra for freezing. to make it more palatable for older kids or adults, add more spices or a load of chilli!
