MethodSoak the lentils for 10 mins and remove the scummy froth stuff that rises to the top! Rinse thoroughly.Fry the onion in some olive oil with a little curry powder for few mins until browned. Peel the carrot and chop it into smallish cubes. Chuck in the carrot and lentils and fry on shallow heat for 2 min. Add enough stock or water to cover and stir it to mix. Cook on a low heat for about 15 mins or until mushy. | |||||||||||||||||||||
