Ingredients6 chicken breasts2 cans tomatoes (put through blender) 3 onions chopped 2 red peppers chopped into large chunks 3 carrots chopped into chunks 4 potatoes chopped into large chunks 3 tablespoons olive oil 1 tablespoon plain flour 1 tablespoon paprika Cayenne pepper (to taste- about 1 tsp is mild) 300 ml veg stock 2 tablespoons tomato puree season to taste 1 tablespoon sugar 150 ml greek yoghurt |
Handy HintYou can leave out chicken and add lentils to make it veggie. Also add more veg if wanted |

MethodHeat oven to 180C/ 350 F gas 4Brown the chicken and remove from heat Gently fry onions until soft. Stir in flour and paprika and cayenne Cook for about a minute and add the tomatoes, puree,sugar, stock and the vegetables. Bring to boil and then pour over chicken in a casserole dish. Put in oven and cook for about 90 minutes Stir in yoghurt Serve with brown rice | |||||||||||||||||||||
