Ingredients

6 chicken breasts
2 cans tomatoes (put through blender)
3 onions chopped
2 red peppers chopped into large chunks
3 carrots chopped into chunks
4 potatoes chopped into large chunks
3 tablespoons olive oil
1 tablespoon plain flour
1 tablespoon paprika
Cayenne pepper (to taste- about 1 tsp is mild)
300 ml veg stock
2 tablespoons tomato puree
season to taste
1 tablespoon sugar
150 ml greek yoghurt

Handy Hint

You can leave out chicken and add lentils to make it veggie. Also add more veg if wanted

Method

Heat oven to 180C/ 350 F gas 4
Brown the chicken and remove from heat
Gently fry onions until soft. Stir in flour and paprika and cayenne
Cook for about a minute and add the tomatoes, puree,sugar, stock and the vegetables. Bring to boil and then pour over chicken in a casserole dish.

Put in oven and cook for about 90 minutes
Stir in yoghurt
Serve with brown rice
