Ingredients

115g (4oz) butter
115g (4oz) caster sugar
85g (3oz) golden syrup
230g (8oz) oats
Finely grated zest of 1 orange, unwaxed if possible

Handy Hint

I use my Parmesan grater to grate the zest finely.

Method

1. Melt the butter, sugar, syrup and orange zest in a pan over a low heat until the butter has melted, stirring occasionally.
2. Stir in the oats.
3. Turn out into a tray (I use an 8 x 8 inch tray for this quantity) and press the mixture down flat.
4. Cook for 15-20 minutes at 180C/Gas Mark 4, until the edges are browned.
5. Leave to cool then cut into slices.

Orange zest is good for you apparently. As with all flapjack, don't let it overcook or it will be too hard - just brown around the edges is fine. I use a silicone tray for this so the the flapjacks just slide out.
