Ingredients

115g self-raising flour
1/2 tsp baking powder
1/4 tsp salt
1/4 tsp mustard powder (optional)
55g cheese, grated
198g can of sweetcorn
1 small egg
150ml milk
A knob of butter

Handy Hint

Best to make the batter in advance and refrigerate for about an hour as the mixture thickens nicely.

Method

1. Sieve the flour, baking powder, salt and mustard powder into a large bowl and then stir in the grated cheese and the sweetcorn.
2. Lightly beat the egg and milk together and then gently stir into the bowl to form a thick batter.
3. Melt the butter in a large frying pan until it is bubbling and drop large spoonfuls of the batter into the pan, space well apart.
4. Cook for about 3 minutes and then flip over for another 3 minutes until golden, then serve.

I loved these!! Good job as my daughter that I made them for wouldn't touch them, so I was forced to eat hers. Can't understand why she didn't like them though as I imagine they'd be devoured by most kids

These were great, dead easy and a big hit with the kids.

These pancakes are great for little ones, lovely and cheesey taste and especially good for baby led weaning as they are easy to hold and don't really fall apart. You can easy add cooked chicken, peppers or anything else you fancy really. Enjoy!
