Ingredients

300g red lentils
3/4 carrots, peeled and grated
2 slices bacon, chopped into small pieces
a ham bone if you can get one
1 tsp marigold stock

Handy Hint

Freezes beautifully. Goes well with cheese scones.

Method

Fry the bacon in the bottom of a big saucepan.
Add ham bone.
Add the lentils and carrots.
Stir for a minute to wilt.
Add 1.5l boiling water and the stock powder.
Bring to boil then reduce to a simmer for at least 45 minutes, longer if you like a more mushy, thick soup.
Remove bone and allow to cool slightly before serving

Could be made veggie by leaving out the bacon, but tastes a bit dull then.
