MethodCut little fillet bits off chicken breasts and lay them between two large bits of cling-film. Whack them with a rolling pin or similar to flatten them.Cut the chicken into finger shapes, about 5cm wide. Get three plates ready, one with flour, one with egg and one with matzo meal/breadcrumbs. Grate a bit of parmesan and add some herbs to the breadcrumbs. Dip the chicken in flour, the egg and then the breadcrumbs. Shallow fry in a pan in some vegetable oil. Serve with ketchup, mayo or just a squeeze of lemon juice. | |||||||||||||||||||||
