chicken breasts x 2
egg
flour
parmesan cheese
mixed herbs
matzo meal or breadcrumbs

can do them in oven but are a bit dry.

Method

Cut little fillet bits off chicken breasts and lay them between two large bits of cling-film. Whack them with a rolling pin or similar to flatten them.

Cut the chicken into finger shapes, about 5cm wide. Get three plates ready, one with flour, one with egg and one with matzo meal/breadcrumbs. Grate a bit of parmesan and add some herbs to the breadcrumbs. Dip the chicken in flour, the egg and then the breadcrumbs. Shallow fry in a pan in some vegetable oil. Serve with ketchup, mayo or just a squeeze of lemon juice.

can also be baked in oven - we make these regularly at home, i bang them onto a tray with oven chips or put potatoes into bake in advance. kids love to help make the goujons, needless to say - especially if you whizz up fresh breadcrumbs in the food processor!
