Ingredients

10 oz pasta
150g Quorn chicken-style pieces
1 small head of broccoli, steamed
1 400g can chopped tomatoes
1 or 2 cloves of garlic
pinch of basil
15ml olive oil
seasoning

Method

Bring to the boil a large pan of water & add the pasta. Cook for 10 or 15 minutes.
Puree the tomatoes with the garlic, pour into a pan, add the basil & heat. When hot, add the quorn & simmer for 5 minutes. Drain the pasta & add the tomatoes with Quorn, the broccoli, olive oil & seasoning. Stir & serve.

I do this too but fry a chopped onion and some mushrooms too, add them to the mix, plus a handful of sweetcorn. Handful of grated cheese on top too!

This is a tasty nutritious balanced meal that is economical & quick to preapre. It is rich in protein, fibre, vitamins, minerals & antioxidants. A gluten free version can be made with gluten free pasta. Variation - use 1 finely chopped leek instead of the broccoli - equally delicious!
