Ingredients

Cup of cooked Rice
Large handful of cooked frozen peas
Cooked chicken (equivalent to 1 chicken breast)
1 egg beaten
1 tbsp vegetable oil

Handy Hint

Always make sure you add the egg to a clear space in the wok or it will make the fried rice soggy.

Method

Heat the oil in a wok or large frying pan. Add the cooked rice, cooked chicken and peas and keep moving in the wok until they are hot.

Move the rice mixture to one side in the wok. Add the beaten egg to the space in the wok and stir while it cooks until it resembles scrambled egg.

Mix the egg in with the rice, chicken and peas and serve.

Can also be made with prawns and any other cooked veg.
