Ingredients

750g bag frozen potato wedges
Small tin (198g) sweetcorn (drained)
2 x 150g tins tuna in brine (drained)
1 red onion (sliced)
4 tbsp low-fat mayo or creme fraiche
75g Cheddar cheese (grated)
4 tbsp chopped chives

Method

1. Heat oven to Mark 6/200C.
2. Put the potato wedges into an oven-proof dish & bake for 15-20 mins until crispy.
3. Mix the tuna with the red onion, mayo & chives & season. Spoon the tuna mix over the wedges, combining it slightly.
4. Top with cheddar & bake for 10-12 mins until the cheese is melted and golden.

Very yummy and a good way to add some fish to our diet. We didn't have wedges so just used boiled potatoes and then baked them with some oil and pepper. A great store cupboard recipe

A Brilliant store cupboard standby that is so EASY yet really hearty & filling. The potato wedges make a great alternative to pasta.
