Ingredients

500g carrots
1 onion
2 cloves garlic
2 chillies
3 cups stock, chicken or vegetable
1/2 tin coconut cream or milk
1/2 bunch coriander

Method

1. Chop and saute the carrots, onion, garlic and chilli for about 10 minutes.
2. Add the stock and simmer for about 10 minutes.
3. Add the coconut milk and bring back to a simmer.
4. Add the coriander and take off the heat.
5. Then liquidize the lot and enjoy!

This is a great warming soup, so easy to make and can be frozen. To make it a one dish meal you can add chopped smoked sausage (Herta/Mattesons type) - fantastic!
