2 cloves garlic
3 cups stock, chicken or vegetable
1/2 tin coconut cream or milk
1/2 bunch coriander
Method1. Chop and saute the carrots, onion, garlic and chilli for about 10 minutes.
2. Add the stock and simmer for about 10 minutes.
3. Add the coconut milk and bring back to a simmer.
4. Add the coriander and take off the heat.
5. Then liquidize the lot and enjoy!
